Spinacia oleracea, spinach, is an edible, flowering plant from Asia, but researchers say that early Iranians first cultivated this plant, and then brought it to India and China in the trade markets. Many regard spinach among the healthiest vegetables available due to the rich source of vitamins and minerals, phyto-nutrients and flavonoids it offers.  Spinach is rich in pro-vitamin A, vitamin C, B-Complex, iron, as well as a high concentration of the alkalizing minerals magnesium, phosphorus, potassium, sodium & other trace elements.
